Ingredients
  

For the Fruit Salad
  • 2 cups Strawberries hulled and quartered
  • 2 cups Pineapple cubed
  • 1 pint Blueberries
  • 3 medium Kiwi peeled and sliced
  • 2 medium Oranges segmented
For the Honey Lime Dressing
  • 1/4 cup Honey or maple syrup
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 teaspoon Lime Zest

  1. Prepare all the fruits according to the ingredient notes (hulling strawberries, cubing pineapple, peeling and slicing kiwi, segmenting oranges, and rinsing blueberries).
  2. In a large mixing bowl, gently combine the strawberries, pineapple, blueberries, kiwi, and orange segments.
  3. Prepare the dressing: In a small bowl, whisk together the honey, fresh lime juice, and lime zest until well combined and smooth.
  4. Pour the honey-lime dressing evenly over the fruit mixture. Toss gently using a rubber spatula to ensure all the fruit is lightly coated without bruising the delicate berries.
  5. For optimal flavor, cover the fruit salad and chill in the refrigerator for at least 15 minutes before serving. This allows the flavors of the dressing to meld with the fruit.
  6. Serve cold as a light dessert, vibrant side dish, or healthy start to the day.

Notes

This salad tastes best when made and served the same day. You can substitute other seasonal fruits like grapes, mango, or raspberries. Taste the dressing before adding; if your honey is very thick, you may need an extra teaspoon of lime juice.
