Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 pound small red potatoes quartered
  • 1 pound smoked sausage like andouille or kielbasa, sliced into ½-inch thick rounds
  • 1 cup fresh or frozen corn kernels or 2 cobs of corn, cut into 1-inch pieces
  • 1 medium yellow onion cut into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter melted
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon Old Bay seasoning
  • 0.25 teaspoon cayenne pepper optional, for a little heat
  • salt and freshly ground black pepper to taste
  • fresh parsley chopped, for garnish
  • lemon wedges for serving

Method
 

  1. Preheat your oven to 400°F (200°C). On a large baking sheet, spread the quartered red potatoes in a single layer. Drizzle with 1 tablespoon of olive oil, and season generously with salt and pepper. Toss to coat.

  2. Place the baking sheet with the potatoes in the preheated oven and roast for 15 minutes. This initial roasting helps to ensure the potatoes are tender when the rest of the ingredients are added.

  3. While the potatoes are roasting, in a large bowl, combine the sliced smoked sausage, corn kernels (or corn pieces), and onion wedges.

  4. In a small bowl, whisk together the melted butter, remaining 1 tablespoon of olive oil, minced garlic, smoked paprika, Old Bay seasoning, cayenne pepper (if using), salt, and black pepper.

  5. After the potatoes have roasted for 15 minutes, carefully remove the baking sheet from the oven. Add the sausage, corn, and onion mixture to the baking sheet, distributing them evenly around the potatoes.

  6. Pour the prepared butter and spice mixture evenly over all the ingredients on the baking sheet. Toss everything gently to ensure each piece is well-coated.
  7. Place the baking sheet back into the oven and roast for another 10 minutes, or until the sausage is cooked through and slightly browned, and the vegetables are tender.

  8. Remove the baking sheet from the oven once more. Add the peeled and deveined shrimp in a single layer amongst the other ingredients. Toss gently to briefly coat the shrimp with the glistening sauce.

  9. Return the baking sheet to the oven and bake for an additional 5–7 minutes, or until the shrimp are pink, opaque, and cooked through. Be careful not to overcook the shrimp, or they will become tough.

  10. Carefully remove the Sheet Pan Shrimp Boil from the oven. Garnish generously with fresh chopped parsley. Serve immediately with lemon wedges on the side for squeezing over the top.
