  • 4 ears Fresh Corn on the Cob Husk removed
  • 2 tablespoons Unsalted Butter Melted
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Smoked Paprika
  • 1/4 teaspoon Kosher Salt Or to taste
  • 1/8 teaspoon Black Pepper Freshly ground
  • 2 tablespoons Cotija Cheese Crumbled, optional for topping
  • 1 lime Lime Juice Freshly squeezed

Method
 

Instructions
  1. In a small bowl, melt the butter. Whisk in the chili powder, cumin, smoked paprika, salt, and black pepper until well combined to create the seasoning paste.
  2. Brush or rub the melted seasoned butter generously over all sides of the corn on the cob, ensuring the corn is evenly coated.
  3. You can grill or sauté the corn. For grilling: Preheat grill to medium heat. Place corn on the grates and cook for 12-15 minutes, turning occasionally, until kernels are tender and slightly charred.
  4. For sautéing: Heat a large skillet over medium-high heat. Place the corn in the skillet and cook, turning frequently, for about 10-12 minutes until lightly browned on all sides.
  5. Once cooked, remove the corn from the heat. Immediately drizzle with fresh lime juice.
  6. Serve hot, optionally topped with crumbled Cotija cheese.

Notes

For an extra kick, add a pinch of cayenne pepper to the seasoning blend. This recipe works wonderfully with roasted corn as well.
