Method
- In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until it's browned and no longer pink. Drain off any excess grease.1.5 lbs ground beef
- Transfer the browned ground beef to your slow cooker. Add the cubed potatoes, sliced carrots, sliced celery, chopped onion, and minced garlic to the slow cooker.1 lb potatoes, 4 carrots, 2 celery stalks, 1 large onion, 2 cloves garlic
- Pour in the beef broth and the undrained can of diced tomatoes. Stir in the Worcestershire sauce, dried thyme, and dried rosemary. Season generously with salt and black pepper.4 cups beef broth, 1 14.5 ounce can diced tomatoes, 2 tablespoons Worcestershire sauce, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, salt, black pepper
- Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender and the beef is cooked through.
- About 30 minutes before serving, in a small bowl, whisk together the 1/4 cup of all-purpose flour and 1/4 cup of cold water until smooth, creating a slurry. Stir this slurry into the stew in the slow cooker. This will help to thicken the broth into a rich, savory sauce. Continue to cook, uncovered, for the remaining 30 minutes, stirring occasionally, until the stew has thickened.1/4 cup all-purpose flour, 1/4 cup cold water
- If using, stir in the frozen peas during the last 30 minutes of cooking.1 cup frozen peas
- Ladle the hot stew into bowls. Taste and adjust seasoning if necessary before serving. Enjoy your hearty and delicious slow cooker beef stew!
