Method
- Toast your whole-grain bread slices to your desired level of crispness in a toaster or under the broiler. Aim for a golden-brown hue that will provide a sturdy base for your toppings.4 slices whole-grain bread
- While the bread is toasting, halve the ripe avocado, remove the pit, and scoop the flesh into a small bowl. Add a pinch of salt and pepper. You can either mash it with a fork for a chunkier texture or blend it with a splash of olive oil for a smoother consistency. If you prefer a touch of acidity, a tiny squeeze of lemon or lime juice can be added at this stage.1 ripe avocado, to taste salt, to taste black pepper, 2 tablespoons olive oil, lemon or lime juice
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Crack the eggs into the pan, ensuring they have enough space. You can cook them sunny-side up, over-easy, or over-medium, depending on your preference for yolk consistency. Season with salt and pepper. Cook for 2-4 minutes, or until the whites are set and the yolks are cooked to your liking. If cooking multiple eggs at once, you might need to adjust the heat slightly to ensure even cooking.2 tablespoons olive oil, 4 large eggs, to taste salt, to taste black pepper
- Once the bread is toasted, spread a generous layer of the prepared avocado onto each slice. This creates a creamy, flavorful foundation.4 slices whole-grain bread, 1 ripe avocado
- Carefully place one perfectly cooked egg on top of the avocado on each slice of toast.4 large eggs, 4 slices whole-grain bread, 1 ripe avocado
- Drizzle the remaining 1 tablespoon of olive oil over the eggs and avocado. Garnish with your desired optional toppings such as a sprinkle of red pepper flakes for a hint of heat, finely chopped chives for freshness, or a dusting of smoked paprika for an extra layer of flavor. Serve immediately and enjoy the deliciousness!4 slices whole-grain bread, 4 large eggs, 1 ripe avocado, to taste salt, 2 tablespoons olive oil, red pepper flakes, chives, smoked paprika
Notes
For the best taste and texture, it’s recommended to consume Savory Egg and Avocado Toast immediately after preparation. If you find yourself with leftovers, you can store the components separately. Leftover mashed avocado can be stored in an airtight container in the refrigerator (press plastic wrap directly onto the surface to prevent browning) for 1-2 days. Cooked eggs can be stored for 2-3 days. Toasted bread can be stored at room temperature for up to 2 days in a paper bag or bread box.
Reheating avocado may alter its texture and color; gently warm it if necessary. Reheat eggs gently in a skillet or microwave. The ideal way to reheat is to re-toast bread, spread with fresh or gently reheated avocado, and top with freshly cooked or gently reheated eggs.
