Sausage and Veggies Skillet

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound smoked sausage (such as kielbasa or andouille), sliced into ½-inch thick rounds
  • 1 large onion, chopped
  • 2 bell peppers (any color), seeded and chopped
  • 1 cup broccoli florets
  • 1 cup chopped zucchini
  • ½ teaspoon garlic powder
  • ½ teaspoon dried Italian seasoning
  • salt and freshly ground black pepper to taste

  • grated Parmesan cheese
  • fresh parsley

  • Large skillet or cast-iron pan

Method
 

  1. Heat the olive oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced sausage and cook for 5-7 minutes, or until browned on both sides. Remove the sausage from the skillet and set aside on a plate.

  2. Add the chopped onion to the same skillet, adding a touch more oil if needed. Cook for 3-4 minutes until softened and translucent.

  3. Toss in the chopped bell peppers and broccoli florets. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften but still have a slight bite.

  4. Add the chopped zucchini to the skillet, along with the garlic powder, Italian seasoning, salt, and pepper. Stir well to combine and cook for another 3-5 minutes, until the zucchini is tender-crisp.

  5. Return the cooked sausage to the skillet. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld and the sausage to heat through.

  6. Remove from heat. Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
