Ingredients
  

For the Tea Base
  • 8 cups Water
  • 6 standard bags Black Tea (such as Darjeeling or Orange Pekoe) Use high-quality tea bags for best flavor
  • 1/2 cup Granulated Sugar Adjust to taste
For the Peach Infusion
  • 2 large Ripe Peaches Peeled, pitted, and sliced
  • 1/4 cup Fresh Lemon Juice
  • 2 sprigs Fresh Mint For garnish (optional)
  • Ice Ice For serving

Method
 

Instructions
  1. Bring 8 cups of water to a rolling boil in a large saucepan.
  2. Remove the water from the heat. Add the tea bags and allow them to steep for exactly 5 minutes. Do not over-steep, or the tea will become bitter.
  3. Remove the tea bags, squeezing gently if necessary. While the hot tea is still warm, stir in the 1/2 cup of granulated sugar until it is completely dissolved.
  4. Add the sliced peaches to the warm tea mixture. Let the peaches infuse for at least 15 minutes off the heat, allowing the flavors to meld. For a richer flavor, you can steep for up to 1 hour.
  5. Strain the tea mixture through a fine-mesh sieve into a large pitcher to remove tea bag remnants and peach solids. Stir in the fresh lemon juice.
  6. Refrigerate the peach tea for at least 2 hours, or until thoroughly chilled. Serve over plenty of ice, garnished with a fresh lemon slice or a sprig of mint.

Notes

For a stronger peach flavor, lightly muddle half of the peach slices before adding them to the warm tea. If you prefer a less sweet tea, start with 1/4 cup of sugar and adjust after the steeping period.
