- Bring 8 cups of water to a rolling boil in a large saucepan.
- Remove the water from the heat. Add the tea bags and allow them to steep for exactly 5 minutes. Do not over-steep, or the tea will become bitter.
- Remove the tea bags, squeezing gently if necessary. While the hot tea is still warm, stir in the 1/2 cup of granulated sugar until it is completely dissolved.
- Add the sliced peaches to the warm tea mixture. Let the peaches infuse for at least 15 minutes off the heat, allowing the flavors to meld. For a richer flavor, you can steep for up to 1 hour.
- Strain the tea mixture through a fine-mesh sieve into a large pitcher to remove tea bag remnants and peach solids. Stir in the fresh lemon juice.
- Refrigerate the peach tea for at least 2 hours, or until thoroughly chilled. Serve over plenty of ice, garnished with a fresh lemon slice or a sprig of mint.
Notes
For a stronger peach flavor, lightly muddle half of the peach slices before adding them to the warm tea. If you prefer a less sweet tea, start with 1/4 cup of sugar and adjust after the steeping period.
