Ingredients

  • 1 cup frozen raspberries
  • 1 cup frozen pineapple chunks
  • 1/2 cup unsweetened coconut milk full-fat recommended for creaminess
  • 1/4 cup unsweetened almond milk or water for a thinner consistency
  • 2 tablespoons lime juice freshly squeezed is best
  • 1-2 tablespoons maple syrup or agave nectar adjust to your sweetness preference
  • A few fresh mint leaves for garnish
  • Extra raspberries or pineapple chunks for garnish

Equipment

  • Blender

Method

  1. In your blender, add the frozen raspberries and frozen pineapple chunks. Using frozen fruit is key to achieving that thick, icy, and refreshing colada texture without needing ice, which can dilute the flavor.
1 cup frozen raspberries, 1 cup frozen pineapple chunks
  2. Pour in the unsweetened coconut milk and your chosen unsweetened almond milk (or water). The coconut milk provides that characteristic creamy, tropical richness of a colada, while the almond milk helps to achieve the desired consistency.
1/2 cup unsweetened coconut milk, 1/4 cup unsweetened almond milk
  3. Squeeze in the fresh lime juice. This is crucial for balancing the sweetness of the fruit and adding a zesty counterpoint that really wakes up the palate. Then, add your sweetener of choice, starting with one tablespoon of maple syrup or agave nectar, and add more to taste later.
2 tablespoons lime juice, 1-2 tablespoons maple syrup or agave nectar
  4. Secure the lid on your blender and blend on high speed until the mixture is completely smooth and creamy. You might need to stop and scrape down the sides of the blender a few times to ensure everything is incorporated. For an extra thick smoothie, use the tamper if your blender has one.
  5. Once blended, taste the raspberry colada twist. If it's not sweet enough for your liking, add another half tablespoon of maple syrup or agave nectar and blend again briefly. If it’s too thick, add a splash more almond milk or water and blend until you reach your preferred consistency.
1/4 cup unsweetened almond milk, 1-2 tablespoons maple syrup or agave nectar
  6. Pour the refreshing raspberry colada twist into chilled glasses. Garnish with a few fresh mint leaves, a couple of extra raspberries, or a small piece of pineapple for an extra touch of elegance and flavor. Enjoy your sensational non-alcoholic delight right away while it’s perfectly chilled and blended.

Notes

Best enjoyed immediately after preparation. Leftovers can be stored in an airtight container in the refrigerator for up to 24 hours. Revive by stirring or pulsing in the blender with a splash of almond milk or water. Freezing is not recommended.
