Ingredients
  

  • 2 medium zucchinis ends trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • to taste salt
  • to taste freshly ground black pepper
  • 1/4 cup marinara sauce or pizza sauce, or your favorite tomato-based sauce
  • 1/2 cup shredded mozzarella cheese or a blend of mozzarella and cheddar

  • chopped bell peppers
  • mushrooms
  • fresh basil for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Wash the zucchinis thoroughly. Slice them into rounds about 1/4 to 1/2 inch thick. Aim for uniform thickness so they cook evenly.

  2. Arrange the zucchini slices in a single layer on the prepared baking sheet. Drizzle them lightly with olive oil. Sprinkle evenly with dried oregano, garlic powder, salt, and freshly ground black pepper. Ensure each slice gets a light coating of seasonings.

  3. Place the baking sheet in the preheated oven and bake for 10-12 minutes. This initial bake will soften the zucchini slightly and help remove some of its excess moisture, preventing them from becoming soggy. You’ll notice the zucchini has softened and might have released some water.
  4. Carefully remove the baking sheet from the oven. Spoon a small amount of marinara sauce onto each zucchini round, spreading it gently with the back of the spoon. Be careful not to overload the zucchini with sauce, as this can also lead to sogginess.

  5. Sprinkle a generous amount of shredded mozzarella cheese over the sauce on each zucchini bite. Now is the time to add any other desired toppings, such as mini pepperonis, sliced olives, or finely chopped vegetables. Remember, smaller toppings work best for these bite-sized pieces.

  6. Return the baking sheet to the oven and bake for another 5-8 minutes, or until the cheese is melted, bubbly, and lightly golden brown, and the toppings are heated through. The zucchini should be tender but not mushy.
  7. Carefully remove the Quick Easy Zucchini Pizza Bites from the oven. Let them cool for a minute or two before transferring them to a serving platter. Garnish with fresh basil leaves if desired. Serve immediately and enjoy this delicious, healthy twist on pizza!
