- In a large mixing bowl, combine the shredded or diced cooked chicken breast, rinsed and drained chickpeas, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped fresh parsley. - Pour the prepared creamy lemon-herb dressing over the salad ingredients.
- Gently toss all the ingredients together until everything is evenly coated with the dressing. Ensure the chicken, chickpeas, and vegetables are well distributed.
- Your Protein Lunchtime Salad is now ready to enjoy! You can serve it immediately, or for an even more enhanced flavor, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. It's best to store the salad dressed to prevent the ingredients from drying out. If you prefer, you can keep the dressing separate and toss it with the salad just before serving to maintain the freshest texture of your vegetables. This salad is best enjoyed cold, so reheating is generally not recommended.
