Method
 

  1. In a large mixing bowl, beat together the softened unsalted butter and granulated sugar with an electric mixer until the mixture is light and fluffy. This usually takes about 3-4 minutes.

  3. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough.
  5. Add the freeze-dried strawberry powder to the dough and mix until evenly distributed. Then, add a few drops of pink food coloring and mix until you achieve your desired pretty pink hue. You may need more or less depending on the intensity of your food coloring and the color of your strawberry powder.

  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This chilling step is crucial for easier handling and to prevent the cookies from spreading too much during baking.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Once the dough is chilled, roll it into small 1-inch balls. You can lightly dust your hands with flour if the dough is sticky.
  9. For a charming "blossom" effect, you can gently press the top of each cookie ball with the tines of a fork, creating a crosshatch pattern. For a more pronounced flower look, you can gently flatten the ball slightly and then use a small, sharp knife to make shallow cuts around the edges, curving them inward to resemble petals.
  10. Place the shaped cookies about 2 inches apart on the prepared baking sheets. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. Do not overbake, as they will continue to firm up as they cool.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  12. While the cookies are cooling, whisk together the powdered sugar and milk or lemon juice in a small bowl until smooth. Add a drop of pink food coloring if desired.
