- Place the chicken breasts in the bottom of a 6-quart slow cooker.
- In a medium bowl, whisk together the crushed pineapple (with juice), BBQ sauce, teriyaki sauce, apple cider vinegar, brown sugar, garlic powder, ground ginger, and red pepper flakes (if using).
- Pour the sauce mixture evenly over the chicken breasts in the slow cooker.
- Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the chicken is easily shreddable.
- Remove the chicken from the slow cooker and place it in a large bowl. Use two forks to shred the chicken completely.
- Return the shredded chicken to the slow cooker, stirring well to thoroughly coat it in the remaining sauce. Let it sit on the 'Keep Warm' setting for 15 minutes to absorb flavor.
- Serve the Pineapple BBQ Chicken hot on toasted buns, topped with a scoop of crunchy coleslaw.
Notes
The cooking time will vary based on the thickness of the chicken breasts. For a thicker sauce consistency, remove the lid during the last 30 minutes of cooking time (if on LOW) to allow some liquid to evaporate, or mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the sauce during the last 15 minutes.
