Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • to Taste salt
  • to Taste freshly ground black pepper
  • 2 tablespoons olive oil divided
  • 1 cup cherry tomatoes halved or quartered if large
  • 1/2 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons balsamic glaze store-bought or homemade
  • 1/4 cup prepared pesto store-bought or homemade
  • Fresh mozzarella slices or balls optional, for topping

Method
 

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season generously on both sides with salt and freshly ground black pepper.

  2. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Once the oil is shimmering, carefully place the seasoned chicken breasts in the skillet. Sear for about 3-4 minutes per side, until a golden-brown crust forms.

  3. In a medium bowl, combine the halved cherry tomatoes, chopped fresh basil, minced garlic, grated Parmesan cheese, and the remaining 1 tablespoon of olive oil. Gently toss everything together to coat the tomatoes and basil. Season with a pinch of salt and pepper if desired.

  4. Once the chicken is seared on both sides, remove the skillet from the heat. Spoon a generous amount of the prepared bruschetta topping over each chicken breast, ensuring it’s evenly distributed.
  5. Transfer the oven-safe skillet to the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Once the chicken is fully cooked, carefully remove the skillet from the oven. Drizzle the prepared pesto all over the chicken and topping. Then, drizzle the balsamic glaze artfully over the entire dish. If using fresh mozzarella, arrange slices or balls on top of the bruschetta mixture during the last few minutes of baking, or after it comes out of the oven, allowing it to melt slightly.

  7. Let the Pesto Bruschetta Chicken rest in the skillet for about 5 minutes before serving. This allows the juices to redistribute, ensuring a tender and moist final product.

Notes

This recipe is great for busy weeknights or entertaining guests. Optional fresh mozzarella can be added for extra richness. Serve hot, perhaps over pasta, rice, or with a side of roasted vegetables.
