- In a mason jar, bowl, or any airtight container, add the rolled oats, chia seeds, and a pinch of salt. Give them a quick stir to distribute evenly.1/2 cup rolled oats (old-fashioned oats), 1 tablespoon chia seeds, Pinch salt
- Pour in the milk of your choice. This is where you can adjust the consistency – start with 1 cup, and if you prefer a thicker result, you can reduce it slightly next time.1 cup milk (dairy or non-dairy like almond, oat, or soy milk)
- Dollop the peanut butter directly into the container. If your peanut butter is very firm, you might want to stir it a little with your spoon to help it break up, but it’s not strictly necessary as it will soften overnight.2 tablespoons peanut butter (creamy or crunchy, your preference!)
- If you desire a touch more sweetness, add the honey or maple syrup. The vanilla extract, if using, introduces a warm, comforting aroma that complements the peanut butter beautifully.1 teaspoon honey or maple syrup (optional, for added sweetness), 1/2 teaspoon vanilla extract (optional)
- Stir everything together REALLY well. Ensure the peanut butter is as incorporated as possible, and there are no dry clumps of oats or chia seeds at the bottom. The goal is a homogenous mixture.
- Place a lid on your container and refrigerate for at least 4 hours, but ideally overnight. This allows the oats and chia seeds to absorb the liquid, creating that signature thick and creamy texture.
- In the morning, give your Peanut Butter Overnight Oats a good stir. If it’s too thick, you can add a splash more milk. Add your favorite toppings like fresh fruit, a sprinkle of extra nuts, or a drizzle of honey before digging in.1 cup milk (dairy or non-dairy like almond, oat, or soy milk), sliced banana, berries, chopped peanuts, chocolate chips, granola
Notes
Store in an airtight container in the refrigerator for up to 3-4 days. Texture may thicken over time. Add more milk if too thick. Freezing is not recommended due to texture changes.
