- In a medium-sized mixing bowl, add the rolled oats, chia seeds, ground flaxseed (or crushed nuts), and the pinch of salt. Stir these dry ingredients together until they are well combined. - To the bowl with the dry ingredients, add the creamy peanut butter, honey (or maple syrup), and vanilla extract.1/2 cup creamy peanut butter, 1/3 cup honey or maple syrup, 1 teaspoon vanilla extract
- Using a sturdy spoon or spatula, begin mixing all the ingredients together. It might seem a bit dry or crumbly at first, but keep mixing. The warmth from your hands as you stir will help the peanut butter and honey bind everything together. Continue mixing until a cohesive, dough-like mixture forms that you can easily roll into balls.
- If you are using mini chocolate chips, gently fold them into the mixture now. Be careful not to overmix at this stage, as you want the chocolate chips to remain distinct within the bites.1/4 cup mini chocolate chips
- Once the mixture is well combined and holds together when squeezed, it’s time to form the energy bites. Take about one tablespoon of the mixture and roll it between your palms to form a compact ball. Repeat this process until all the mixture has been used.
- Place the rolled Peanut Butter Energy Bites on a plate or baking sheet lined with parchment paper. This parchment paper will prevent them from sticking. Transfer the plate or baking sheet to the refrigerator for at least 30 minutes. This chilling period allows the bites to firm up and hold their shape, making them easier to handle and enjoy.
Notes
Store in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze for up to three months.
