Ingredients
  

Cream of Rice Base
  • 1/2 cup Cream of Rice cereal Instant or quick-cooking
  • 2 cups Water or Milk Use water for lower calories, or milk (dairy or non-dairy) for creaminess
  • 1/8 teaspoon Salt
Peanut Butter Flavoring & Toppings
  • 2 tablespoons Creamy Peanut Butter Natural unsweetened preferred
  • 1 teaspoon Maple Syrup or Honey Optional, adjust to taste
  • 1/4 teaspoon Vanilla Extract

Instructions
  1. In a small saucepan, combine the water (or milk), Cream of Rice cereal, and salt.
  2. Bring the mixture to a boil over medium-high heat, stirring constantly to prevent lumps from forming on the bottom.
  3. Once boiling, reduce the heat to low and continue to cook, stirring occasionally, for about 3-5 minutes, or until the cereal has thickened to your desired consistency.
  4. Remove the saucepan from the heat. Immediately stir in the peanut butter, maple syrup (if using), and vanilla extract until the peanut butter is fully melted and incorporated, creating a smooth, creamy texture.
  5. Pour the peanut butter cream of rice into your serving bowl. If the mixture is too thick, stir in an extra splash of hot milk or water until the desired consistency is reached.
  6. Serve immediately. Optional toppings include sliced banana, a light dusting of cinnamon, or chopped peanuts.

Notes

For an extra boost of protein, consider using protein-fortified Cream of Rice or stirring in half a scoop of vanilla or unflavored protein powder after removing from heat (add a splash of liquid if necessary after adding powder).
