- In a mason jar, bowl, or airtight container, combine the 1/2 cup of rolled oats, 1 cup of milk, 1/4 cup of Greek yogurt, 1 tablespoon of chia seeds, 1-2 teaspoons of maple syrup or honey, and 1/2 teaspoon of vanilla extract. - Gently fold in the diced peaches into the oat mixture. If you want to mimic the baked quality of a crisp, a few peaches at the bottom and some on top can be nice.1/2 cup Fresh or Frozen Peaches
- In a separate small bowl, mix together the 2 tablespoons of rolled oats, 1 tablespoon of chopped nuts, and 1/4 teaspoon of cinnamon. If using, drizzle in the 1 teaspoon of melted butter or coconut oil and stir until the dry ingredients are lightly coated. - If you're using a jar, you can spoon half of the oat mixture in, then layer half of the peach mixture and half of the crisp topping. Repeat with the remaining oat mixture, peaches, and crisp topping. Alternatively, you can simply ensure the crisp topping is sprinkled over the top of the combined oat and peach mixture in your container.
- Secure the lid on your container and place it in the refrigerator for at least 4-6 hours, or preferably overnight. This allows the oats to soften, the chia seeds to work their magic, and all the flavors to meld beautifully.
- In the morning, give your Peach Crisp Overnight Oats a good stir. If the mixture is too thick for your liking, you can add a splash more milk. Enjoy cold, straight from the refrigerator!1 cup Milk
Notes
The crisp topping is best added fresh in the morning if you prefer a firmer texture or are making the oats ahead of time.
