Ingredients
  

For the Filling
  • 6 cups Fresh peaches Peeled, pitted, and sliced (about 8 medium peaches)
  • 1/2 cup Granulated sugar
  • 1/4 cup All-purpose flour or cornstarch for thickening
  • 1 teaspoon Lemon juice freshly squeezed
  • 1/2 teaspoon Ground cinnamon
For the Crisp Topping
  • 1 cup All-purpose flour
  • 1 cup Rolled oats old-fashioned preferred
  • 3/4 cup Brown sugar packed
  • 1/2 teaspoon Ground nutmeg
  • 1/2 cup Cold unsalted butter cut into small cubes

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Prepare the filling: In a large bowl, gently toss the sliced peaches with the granulated sugar, flour, lemon juice, and cinnamon until evenly coated. Pour the mixture into the prepared baking dish and spread into an even layer.
  3. Prepare the topping: In a separate medium bowl, whisk together the flour, rolled oats, brown sugar, and nutmeg.
  4. Cut in the butter: Add the cold, cubed butter to the dry topping ingredients. Use your fingers, a pastry blender, or two knives to cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
  5. Assemble and bake: Sprinkle the crisp topping evenly over the peach filling. Bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges.
  6. Cool slightly before serving. Delicious served warm with vanilla ice cream or whipped cream.

Notes

For a richer flavor, substitute 1/4 cup of the regular flour in the topping with almond flour. Ensure the butter for the topping is very cold for the best crisp texture.
