Ingredients
  

  • 1 cup quick-cooking rolled oats
  • 1/2 cup vanilla or strawberry protein powder
  • 1/4 cup freeze-dried strawberries, crushed into a powder If you don’t have a pre-made powder, you can pulse whole freeze-dried strawberries in a food processor or blender until they form a fine powder.
  • 1/4 cup unsweetened cream cheese, softened If your cream cheese is too firm, you can briefly microwave it for about 10-15 seconds to soften it.
  • 2 tablespoons honey or maple syrup adjust to your sweetness preference
  • 1 tablespoon almond butter or cashew butter
  • 1 teaspoon vanilla extract
  • Pinch salt (optional, for flavor enhancement)
  • 2-4 tablespoons unsweetened almond milk or water as needed
Optional Coatings:
  • white chocolate chips for rolling
  • chopped freeze-dried strawberries for rolling

Method
 

  1. In a medium-sized mixing bowl, add the quick-cooking rolled oats, vanilla or strawberry protein powder, and the crushed freeze-dried strawberries. Stir these dry ingredients together until they are well combined.

  2. Add the softened cream cheese, honey or maple syrup, almond butter (or cashew butter), and vanilla extract to the bowl with the dry ingredients.

  3. Using a sturdy spoon or a spatula, begin to mix all the ingredients together. Continue mixing until a cohesive dough starts to form. You want all the ingredients to be thoroughly incorporated.
  4. If the dough is a little crumbly or too dry to roll, gradually add 1 tablespoon of unsweetened almond milk or water at a time, mixing it in after each addition. Continue adding liquid until the dough holds together easily when pressed and isn't sticky. Be careful not to add too much liquid.

  5. Take about 1 to 1.5 tablespoons of the dough and roll it between your palms to form small balls, roughly 1 inch in diameter. If the dough starts sticking to your hands, you can dampen your hands very slightly with water.
  6. If you’d like to add a coating, it’s best to chill the balls first. Place the rolled protein balls on a plate or baking sheet lined with parchment paper. Pop them into the refrigerator for about 15-20 minutes. Once chilled, you can gently roll them in melted white chocolate or press chopped freeze-dried strawberries into the outside.

  7. Place the finished No-Bake Strawberry Cheesecake Protein Balls back onto the parchment-lined plate or baking sheet. Refrigerate them for at least 30 minutes to allow them to firm up completely before serving.

Notes

Best stored in an airtight container in the refrigerator for up to 7 days. Can also be frozen for up to 3 months.
