Ingredients

  • 1 cup rolled oats (old-fashioned oats work best)
  • 1/2 cup creamy peanut butter (natural or conventional)
  • 1/3 cup honey or maple syrup (for a vegan option)
  • 1/4 cup unsalted butter or coconut oil (melted) melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt omit if your peanut butter is salted
Optional add-ins
  • 1/4 cup chocolate chips optional
  • 1/4 cup chopped nuts optional
  • 1/4 cup shredded coconut optional

Equipment

  • 12-cup muffin tin
  • Paper liners
  • Medium-sized mixing bowl
  • Spatula or wooden spoon
  • Small spoon or cookie scoop

Method

  1. Line a standard 12-cup muffin tin with paper liners. If you don't have liners, you can lightly grease each cup with cooking spray or a little extra melted butter/coconut oil. This will ensure your No Bake Peanut Butter Oat Cups don't stick.
  2. In a medium-sized mixing bowl, combine the creamy peanut butter, honey or maple syrup, melted butter or coconut oil, and vanilla extract. Stir vigorously with a spatula or wooden spoon until the mixture is smooth and well incorporated. Ensure there are no pockets of unmixed peanut butter or sweetener.
1/2 cup creamy peanut butter (natural or conventional), 1/3 cup honey or maple syrup (for a vegan option), 1/4 cup unsalted butter or coconut oil (melted), 1 teaspoon vanilla extract
  3. Add the rolled oats, salt (if using), and any optional add-ins like chocolate chips or chopped nuts to the bowl with the wet ingredients.
1 cup rolled oats (old-fashioned oats work best), 1/4 teaspoon salt, 1/4 cup chocolate chips, 1/4 cup chopped nuts, 1/4 cup shredded coconut
  4. Stir everything together until the oats and any add-ins are evenly coated with the peanut butter mixture. You want to achieve a sticky, cohesive dough-like consistency. Make sure every oat flake has a good coating.
  5. Divide the mixture evenly among the 12 prepared muffin cups. Use a small spoon or a cookie scoop to press the mixture firmly into the bottom and up the sides of each liner to create a cup shape. Ensure the base and sides are well-compacted so the cups hold their shape.
  6. Place the muffin tin in the refrigerator for at least 30 minutes, or in the freezer for about 15 minutes, until the No Bake Peanut Butter Oat Cups are firm and set. This chilling time is crucial for them to hold their form beautifully.

Notes
