- Using a spatula or a sturdy spoon, begin to mix the wet and dry ingredients. Start by incorporating the ingredients from the center outwards, gradually drawing in the dry mixture. Continue mixing until a thick, cohesive dough forms. It might seem a bit crumbly at first, but keep mixing to bring it all together. If the mixture is too dry and doesn't hold its shape, add an extra teaspoon of lemon juice or a touch more almond butter, one teaspoon at a time.
- For easier rolling, cover the bowl with plastic wrap and refrigerate the mixture for about 15-30 minutes. This step allows the fats to firm up, making the dough less sticky and easier to handle.
- Once the dough is chilled or if you’re ready to roll immediately, scoop out approximately one tablespoon of the mixture at a time. Roll the dough between your palms to form small, uniform balls, about 1-inch in diameter. If the dough is sticking to your hands, dampen them slightly with water or dust them with a little extra almond flour.
- Arrange the rolled No-Bake Lemon Poppyseed Protein Balls on a plate or in an airtight container. You can enjoy them immediately, or for best results and to allow the flavors to meld, allow them to set in the refrigerator for at least 30 minutes before consuming.
Notes
These No-Bake Lemon Poppyseed Protein Balls are best stored in an airtight container in the refrigerator. They will stay fresh for up to one week. Freezing is also an excellent option for longer storage; they will last for up to two months. To enjoy frozen protein balls, thaw at room temperature for about 15-20 minutes or enjoy them straight from the freezer for a firmer, more icy treat. Reheating is not necessary.
