- In a large mixing bowl, beat the softened cream cheese until it is light and fluffy using an electric mixer. This should take about 2 minutes.
- Gradually add the sifted powdered sugar to the cream cheese mixture, mixing on low speed until fully incorporated. Scrape down the sides of the bowl as needed.
- Add the creamy peanut butter and vanilla extract. Beat again until the mixture is smooth and creamy, ensuring no lumps remain.
- Gently fold in 3/4 cup of the miniature chocolate chips using a spatula. Be careful not to overmix, as you want the whipped topping to remain light.
- Fold in the thawed whipped topping in two additions, mixing just until no white streaks remain. Stir in the remaining 1/4 cup of chocolate chips.
- Transfer the dip to a serving bowl. Cover and chill in the refrigerator for at least 30 minutes to allow it to firm up slightly. Before serving, drizzle with caramel sauce if desired.
Notes
This dip is best served chilled. For dipping, great options include graham crackers, vanilla wafers, pretzels, apple slices, or strawberries. If you prefer, you can use semi-sweet or milk chocolate chips instead of the standard milk chocolate variety.
