  • 1/2 teaspoon lime zest

  1. Prepare the produce: Dice the ripe nectarines into pieces roughly 1/4 inch in size. Finely mince the red onion and jalapeño, ensuring the jalapeño seeds and membranes are removed if you prefer less heat.
  2. Combine the main ingredients: In a medium-sized mixing bowl, gently combine the diced nectarines, minced red onion, minced jalapeño, and chopped cilantro.
  3. Add the acid and seasoning: Pour the fresh lime juice over the mixture. Add the lime zest, sea salt, and black pepper.
  4. Toss gently: Using a rubber spatula, carefully fold all ingredients together until they are evenly distributed. Be careful not to mash the nectarines while mixing.
  5. Marinate and chill: Cover the bowl and refrigerate the salsa for at least 15 minutes before serving. This allows the flavors to meld together beautifully.
  6. Taste and serve: Before serving, taste the salsa and adjust seasoning if necessary (add more salt, lime juice, or a pinch of sugar if nectarines are tart). Serve immediately with grilled chicken, fish tacos, or your favorite tortilla chips.

Notes
