Ingredients

  • 2 large cucumbers thinly sliced (about 4 cups)
  • 1/4 cup red onion thinly sliced or finely diced (optional)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Equipment

  • Colander
  • Paper towels
  • Medium Bowl

Method

  1. Wash and thinly slice your cucumbers. If using cucumbers with thick, noticeable seeds, it's a good idea to scoop out the seeds with a spoon before slicing to avoid a watery salad. For a more uniform texture, you can also lightly salt the cucumber slices in a colander and let them drain for about 15 minutes to remove excess moisture. Gently pat them dry with paper towels afterward.

  2. In a medium bowl, combine the sour cream, mayonnaise, chopped fresh dill, chopped fresh chives, white vinegar, granulated sugar, salt, and black pepper. Whisk all these ingredients together until the dressing is smooth and well-combined. Taste and adjust the seasonings as needed – you might prefer a little more salt, pepper, or a touch of extra vinegar for tang.
1/2 cup sour cream, 1/4 cup mayonnaise, 2 tablespoons fresh dill, 1 tablespoon fresh chives, 1 tablespoon white vinegar, 1 teaspoon granulated sugar, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  3. Add the prepared cucumber slices to the bowl with the dressing. If you're using red onion, add it at this stage as well. Gently toss everything together to ensure the cucumber slices are evenly coated with the creamy dressing.

  4. For the best flavor, cover the bowl and refrigerate the Mouthwatering Cucumber Salad for at least 30 minutes before serving. This allows the flavors to meld together beautifully and ensures the salad is perfectly chilled. Serve cold as a refreshing side dish.
