Ingredients
  

For the Filling
  • 8 oz Cream Cheese softened
  • 1 cup Shredded Monterey Jack Cheese
  • 1/2 cup Sour Cream
  • 4 slices Bacon cooked and crumbled
  • 1/4 cup Chives finely chopped
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
For Assembly
  • 12 Large Flour Tortillas About 10 inches
  • 1 cup Shredded Cheddar Cheese for topping
  • 1 cup Enchilada Sauce (Red or Green) or mild salsa

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a medium bowl, combine the softened cream cheese, Monterey Jack cheese, sour cream, crumbled bacon, chopped chives, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated and the mixture is smooth.
  3. Lay a tortilla flat on a clean surface. Spread about 2-3 tablespoons of the cream cheese mixture evenly across the entire surface of the tortilla, leaving a small border.
  4. Starting from one edge, tightly roll the tortilla into a cylinder. Place the seam-side down in the prepared baking dish. Repeat with the remaining tortillas, arranging them snugly side-by-side.
  5. Pour the enchilada sauce evenly over the top of the filled tortillas, ensuring most of the rolls are covered. Sprinkle the remaining shredded cheddar cheese over the sauce.
  6. Bake for 20-25 minutes, or until the cheese topping is melted, bubbly, and lightly golden brown around the edges. Let rest for 5 minutes before slicing each roll into 2 or 3 pieces for serving.

Notes

For an extra layer of flavor, lightly sauté the chives before mixing them into the filling. You can substitute chicken or finely diced ham for the bacon if preferred.
