- Preheat your oven to 400°F (200°C). Cut the scrubbed Yukon Gold potatoes into bite-sized cubes, approximately 1-inch pieces. Ensure the pieces are relatively uniform in size for even cooking.2 pounds Yukon Gold potatoes
- In a large bowl, toss the potato cubes with olive oil, chili powder, cumin, smoked paprika, salt, and black pepper. Mix thoroughly until each potato piece is evenly coated with the spices. - Spread the seasoned potato cubes in a single layer on a baking sheet. Avoid overcrowding the pan, as this will steam the potatoes rather than roast them, preventing them from getting crispy. Place the baking sheet in the preheated oven.
- Roast the potatoes for 25-30 minutes, or until they are tender when pierced with a fork and beautifully golden brown with slightly crispy edges. Halfway through the roasting time (around the 15-minute mark), carefully flip the potato cubes to ensure even browning on all sides.
- While the potatoes are roasting, prepare the creamy sauce. In a small bowl, whisk together the mayonnaise, crema Mexicana (or sour cream), fresh lime juice, and minced garlic. Season with a pinch of salt and pepper to taste. - Once the potatoes are cooked and beautifully roasted, remove them from the oven. Transfer the hot potatoes to a clean bowl. Pour the creamy sauce over the warm potatoes and gently toss to coat them evenly.
