Method
- In a medium bowl, combine the softened cream cheese and sour cream. Beat them together with a whisk or an electric mixer until smooth and well combined.1 (8-ounce) package cream cheese, softened, 1/4 cup sour cream
- Add the chopped fresh cilantro, taco seasoning, garlic powder, onion powder, and cayenne pepper (if using) to the cream cheese mixture. Stir until all the seasonings are evenly distributed.2 tablespoons chopped fresh cilantro, 1 tablespoon taco seasoning, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, pinch cayenne pepper
- Gently fold in the finely chopped rotisserie chicken, black beans, corn kernels, diced pickled jalapeños, diced red bell pepper, and diced green bell pepper into the cream cheese mixture. Ensure all the ingredients are thoroughly coated.1 cup shredded rotisserie chicken, finely chopped, 1/2 cup drained and rinsed black beans, 1/2 cup drained and rinsed corn kernels, 1/4 cup diced pickled jalapeños, drained, 1/4 cup finely diced red bell pepper, 1/4 cup finely diced green bell pepper
- Lay one tortilla flat on a clean work surface. Generously spread about one-quarter of the filling mixture evenly over the entire surface of the tortilla, going almost to the edges. Repeat this process with the remaining three tortillas and filling.4 (10-inch) whole wheat or flour tortillas
- Starting from one edge, tightly roll up each tortilla. Aim for a snug roll to prevent the pinwheels from unraveling. Once rolled, wrap each tortilla individually and tightly in plastic wrap.
- Place the wrapped tortilla rolls in the refrigerator for at least 30 minutes (or up to 2 hours).
- Once chilled, unwrap the tortilla rolls. Using a sharp knife, slice each roll into 1-inch thick pinwheels.
- Arrange the Mexican Fiesta Pinwheels on a serving platter. Serve them immediately with your favorite toppings like salsa, guacamole, a dollop of sour cream, shredded lettuce, chopped tomatoes, or extra cilantro.salsa, guacamole, sour cream, shredded lettuce, chopped tomatoes, extra cilantro
Notes
These pinwheels are best enjoyed chilled or at room temperature. Reheating is generally not necessary. If desired, briefly microwave individual pinwheels for 10-15 seconds for gentle warming.
