  • 2 English cucumbers Diced
  • 1.5 cups Corn kernels Freshly grilled or thawed frozen
  • 1 Red onion Finely diced
  • 1 Avocado Cubed, added just before serving
  • 1/2 cup Fresh cilantro Chopped
  • 1 Jalapeño Finely minced (optional, seeds removed)
Dressing
  • 1/4 cup Fresh lime juice About 2-3 limes
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin Ground
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Salt Or to taste
  • 1/4 teaspoon Black pepper Freshly ground

Instructions
  1. Prepare the dressing: In a small bowl, whisk together the fresh lime juice, olive oil, ground cumin, chili powder, salt, and pepper until well combined.
  2. Prepare the vegetables: In a large mixing bowl, combine the diced cucumbers, corn kernels, finely diced red onion, chopped cilantro, and minced jalapeño (if using).
  3. Dress the salad: Pour the prepared lime dressing over the vegetable mixture. Gently toss to ensure all ingredients are evenly coated. Let it sit for about 5-10 minutes to allow the flavors to meld.
  4. Incorporate avocado: Just before serving, gently fold in the cubed avocado. Take care not to over-mix, as the avocado cubes should remain distinct.
  5. Taste and adjust seasoning: Taste the salad and add more salt, pepper, or lime juice, if necessary.
  6. Serve immediately chilled or at room temperature. This salad is excellent served with tortilla chips or alongside grilled chicken or fish.

Notes

For extra creaminess, you can add 1/4 cup of crumbled cotija cheese or a dollop of Greek yogurt to the dressing. If you prefer a smoky flavor, grill the corn rather than using raw or thawed kernels.
