Ingredients
  

  • 1 pound boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies undrained
  • 1 (4 ounce) can mild diced green chilies drained
  • 1 (15 ounce) can black beans rinsed and drained
  • 1 (1 ounce) packet taco seasoning
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder optional, for extra heat
  • 1/4 cup water or chicken broth
  • 1 (10 ounce) bag Nacho Cheese Doritos crushed
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Sour cream for serving
  • Chopped fresh cilantro for serving
  • Diced avocado for serving
  • Salsa for serving

Method
 

  1. Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

  2. Add the bite-sized chicken pieces to the skillet with the onions and garlic. Cook, stirring occasionally, until the chicken is browned on all sides and no longer pink in the center. This should take about 7-10 minutes.

  3. Stir in the undrained Rotel diced tomatoes and green chilies, drained diced green chilies, rinsed black beans, taco seasoning, cumin, and chili powder (if using). Pour in the water or chicken broth. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 10 minutes, allowing the flavors to meld together beautifully.

  4. While the chicken mixture is simmering, place the Nacho Cheese Doritos in a large zip-top bag. Use a rolling pin or the heel of your hand to crush them into coarse crumbs. You want a mix of fine crumbs and some larger pieces for texture.

  5. Pour the cooked chicken and bean mixture into a 9x13 inch baking dish, spreading it evenly. Sprinkle the shredded Monterey Jack cheese and shredded cheddar cheese evenly over the top of the chicken mixture.

  6. Evenly sprinkle the crushed Doritos over the cheese layer.

  7. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly and the Dorito topping is lightly golden and toasted.
  8. Once out of the oven, let the Mexican Chicken with Doritos rest for about 5 minutes before serving. This allows the casserole to set slightly. Serve hot with your favorite toppings.

Notes

Storing: Allow to cool completely, store in an airtight container in the refrigerator for up to 3-4 days.
Reheating (oven): Preheat to 350°F (175°C). Bake covered with foil for 15-20 minutes, uncover for last 5 minutes to crisp topping. May not be as crunchy as fresh.
Reheating (microwave): Heat on medium power in 1-minute intervals, stirring occasionally. Topping may soften.
