Ingredients

  • 1.5 lbs boneless, skinless chicken breasts about 3-4 medium breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried Italian seasoning
  • salt to taste
  • black pepper to taste
  • fresh parsley chopped, optional garnish

Equipment

  • Skillet
  • Meat Mallet
  • Meat Thermometer
  • Cutting Board

Method

  1. Begin by patting the chicken breasts completely dry with paper towels. This crucial step helps to achieve a better sear. If your chicken breasts are very thick, you can pound them slightly with a meat mallet or the bottom of a heavy pan to an even thickness (about 3/4 inch). This ensures they cook evenly.

  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well. Generously season both sides of the chicken breasts with this spice blend, pressing the spices gently into the meat to ensure good adhesion.

  3. Place a large skillet (cast iron works wonderfully here) over medium-high heat. Add the olive oil and butter to the skillet. Allow the butter to melt and the oil to shimmer, indicating the pan is hot enough for searing.
2 tablespoons olive oil, 1 tablespoon butter
  4. Carefully place the seasoned chicken breasts into the hot skillet, ensuring not to overcrowd the pan. You may need to cook the chicken in batches. Let the chicken sear undisturbed for about 4-5 minutes per side, until deeply golden brown and a nice crust has formed.

  5. Once both sides are nicely seared, reduce the heat to medium-low. Cover the skillet with a lid (if you have one) or a piece of aluminum foil. This steams the chicken and ensures it cooks through without drying out.
  6. Continue to cook for another 8-12 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) when tested with a meat thermometer inserted into the thickest part. Cooking time will vary depending on the thickness of your chicken breasts.

  7. Remove the chicken breasts from the skillet and place them on a clean cutting board. Let the chicken rest for at least 5-10 minutes before slicing or serving. Resting allows the juices to redistribute throughout the meat, resulting in even more tender and moist chicken.
