Method
 

  1. Pat the salmon fillets dry with paper towels. This is a crucial step for achieving a nice sear. Season both sides generously with salt and freshly ground black pepper. If your salmon has skin on, you can leave it or carefully remove it.

  2. Heat the olive oil and butter in a large skillet or oven-safe pan over medium-high heat. Once the butter has melted and the oil is shimmering, carefully place the salmon fillets into the hot pan. If using skin-on fillets, place them skin-side down first.

  3. Sear the salmon for about 3-4 minutes per side, until a golden-brown crust forms. The exact cooking time will depend on the thickness of your fillets. You don't need to cook them through completely at this stage, as they will finish cooking in the sauce. Once seared, remove the salmon from the skillet and set it aside on a plate.

  4. Reduce the heat to medium. Add the minced garlic to the same skillet (there should be enough leftover oil and butter, but add a little more if needed). Sauté the garlic for about 30-60 seconds until fragrant, being careful not to burn it.

  5. Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese, lemon juice, Italian seasoning, and red pepper flakes (if using). Continue to stir until the Parmesan cheese is melted and the sauce is smooth and slightly thickened.

  7. Gently nestle the seared salmon fillets back into the creamy sauce. Spoon some of the sauce over the top of each fillet.

  8. Cover the skillet (if you have a lid) or transfer the skillet to a preheated oven at 375°F (190°C). Cook for another 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork. The exact time will depend on the thickness of your salmon.

Storing Leftovers:
