  • 1/2 cup Rolled Oats Old-fashioned preferred
  • 1 cup Milk Dairy, almond, or soy milk work well
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Maple Syrup Adjust to taste
  • 1/2 teaspoon Vanilla Extract
  • Pinch Salt
Toppings (Mix-ins & Garnish)
  • 2 tablespoons Pecans Roughly chopped and lightly toasted
  • 1 teaspoon Maple Syrup For drizzling
  • Optional Cinnamon Dusting for garnish

Method
 

Instructions
  1. In a jar or airtight container, combine the rolled oats, milk, chia seeds, 1 tablespoon of maple syrup, vanilla extract, and salt.
  2. Stir vigorously for about 1 minute until all ingredients are well incorporated and the chia seeds begin to suspend evenly.
  3. Cover the jar tightly and place it in the refrigerator. Allow the mixture to chill and thicken for a minimum of 4 hours, preferably overnight.
  4. In a small dry pan over medium-low heat, toast the chopped pecans for 2-3 minutes until fragrant. Be careful not to burn them. Set aside to cool slightly.
  5. The next morning, check the consistency. If too thick, stir in an extra splash of milk. Taste and adjust sweetness if necessary.
  6. Transfer the overnight oats to a serving bowl (or eat directly from the jar) and top with the toasted pecans and an extra drizzle of maple syrup. Garnish with cinnamon, if desired.

Notes

Toast the pecans ahead of time for a deeper flavor. The texture will thicken significantly overnight due to the chia seeds and oats absorbing liquid.
