- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. If you're using a bagel shaper or have a way to form rings, prepare those now. Otherwise, you can freehand the bagel shape.
- In a medium-sized mixing bowl, whisk together the blanched almond flour, psyllium husk powder, baking powder, salt, and sweetener. - Pour the wet ingredients into the bowl with the dry ingredients. Mix with a spoon or spatula until a sticky dough begins to form. It will be quite moist and resemble a thick batter at this stage.
- Spoon the dough onto the prepared baking sheet. You’ll want to work quickly as the dough can become stickier. Lightly wet your hands with water or lightly grease them with oil to prevent sticking. Divide the dough into 4 equal portions. Gently shape each portion into a bagel by rolling it into a log and then forming a circle, pinching the ends together to create the classic bagel hole. Alternatively, you can use a piping bag with a large round tip to pipe the bagel shapes directly onto the baking sheet for a more uniform look.
- If desired, now is the time to add your favorite toppings. Lightly brush the tops of the bagels with a little water or egg wash to help the seeds and seasonings adhere. - Place the baking sheet in the preheated oven. Bake for 20-25 minutes, or until the bagels are golden brown and firm to the touch. The exact baking time may vary slightly depending on your oven. They should have a nice crust and be cooked through.
- Once baked, remove the bagels from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This allows the interior to set properly.
Notes
Store in an airtight container at room temperature for up to 2 days. Refrigerate for up to 5 days. Freeze for 2-3 months. Reheat by toasting.
