  • 1 cup crushed Lotus Biscoff cookies fine crumbs (about 15-20 cookies)
  • 1 scoop vanilla or unflavoured protein powder
  • 2 tablespoons smooth almond butter (or other nut/seed butter)
  • 1 tablespoon unsweetened almond milk (or other milk of choice)
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1-2 tablespoons finely chopped Biscoff cookies for rolling (Optional)
  • 1-2 teaspoons sugar-free sweetener to taste (Optional)

Method
 

  1. Begin by crushing your Lotus Biscoff cookies into a fine crumb. You can do this by placing them in a zip-top bag and crushing them with a rolling pin, or by using a food processor until you achieve a sand-like consistency. Measure out 1 cup of these fine crumbs.

  2. In a medium-sized mixing bowl, combine the 1 cup of finely crushed Biscoff cookies, 1 scoop of vanilla or unflavoured protein powder, 1/2 teaspoon of ground cinnamon, and a pinch of salt. Whisk these dry ingredients together thoroughly to ensure the protein powder is evenly distributed and there are no clumps.

  3. Add the 2 tablespoons of smooth almond butter to the dry ingredients. This will act as a binder and contribute to the creamy texture.

  4. Add 1 tablespoon of unsweetened almond milk to the bowl. Stir everything together with a spoon or spatula. The mixture should start to come together into a sticky dough. If the mixture feels too dry and crumbly and isn't holding its shape, add another 1/2 tablespoon of almond milk, or more, a tiny bit at a time, until it reaches a consistency where you can easily roll it into balls. Be careful not to add too much liquid, as this can make the balls too sticky.

  5. If you prefer a sweeter treat, you can add 1-2 teaspoons of sugar-free sweetener at this stage. Mix well and taste the dough to see if it meets your sweetness preference. Adjust as needed.

  6. Once the dough is well-combined and has the right consistency, it's time to roll. Take small portions of the mixture (about 1 tablespoon each) and roll them between your palms to form compact balls, approximately 1 inch in diameter.
  7. For an extra burst of Biscoff flavour and texture, you can lightly roll each protein ball in the optional finely chopped Biscoff cookies. This adds a delightful crunch and visual appeal.
