  • 1 lb Cooked lobster meat (tail, claw, and knuckle) Roughly chopped or kept in chunks
  • 2 tablespoons Mayonnaise Use high quality
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Fresh chives Finely snipped
  • 1/2 teaspoon Celery salt
  • 1/4 teaspoon Black pepper Freshly ground
  • 4 Buns New England style hot dog buns (split-top)
  • 2 tablespoons Unsalted butter For toasting buns
For the Drawn Butter
  • 1/2 cup Unsalted butter

  1. Prepare the Lobster Salad: In a medium bowl, gently combine the chopped cooked lobster meat, mayonnaise, lemon juice, chives, celery salt, and black pepper. Mix just until combined, taking care not to over-mix or shred the lobster entirely.
  2. Chill the Lobster Salad: Cover the bowl and refrigerate the lobster mixture for at least 15 minutes to allow the flavors to meld.
  3. Prepare the Drawn Butter: Melt the 1/2 cup of butter in a small saucepan over very low heat. Allow the butter to gently melt completely. For true drawn butter, let the milk solids settle to the bottom; carefully spoon or pour off the clear, golden butterfat into a small serving ramekin, leaving the solids behind.
  4. Toast the Buns: Spread the exterior sides of the split-top buns lightly with 2 tablespoons of soft butter. Heat a large skillet or griddle over medium heat. Place the buns butter-side down on the skillet and toast until golden brown and crisp, about 2-3 minutes per side.
  5. Assemble the Rolls: Generously fill each toasted bun cavity with the chilled lobster salad mixture. Do not overstuff, as the butter is intended for dipping.
  6. Serve Immediately: Serve each lobster roll warm alongside the ramekin of hot drawn butter for dipping and enjoying.
