- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup.
- Spread the frozen tater tots in a single, even layer on the prepared baking sheet. Bake according to package directions (usually 18-22 minutes), flipping halfway through, until they are deeply golden brown and crispy.
- While the tots are baking, cook the bacon in a skillet until crispy. Drain on paper towels and then crumble into small pieces.
- Remove the crispy tater tots from the oven. Immediately sprinkle both the cheddar and Monterey Jack cheeses evenly over the hot tots.
- Return the baking sheet to the oven and bake for an additional 3-5 minutes, or until the cheese is completely melted and bubbly.
- Carefully remove the sheet from the oven. Garnish generously with the crumbled bacon, a dollop of sour cream (or drizzle), and the freshly chopped chives. Season lightly with salt and pepper.
- Serve immediately while hot and crispy.
Notes
For extra flavor, you can add a sprinkle of garlic powder or onion powder on the tots before adding the cheese. If you prefer a liquid topping, mix the sour cream with a splash of milk to create a drizzle.
