Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or homemade blend: 1 tsp chili powder, 1/2 tsp cumin, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/8 tsp cayenne pepper, salt and pepper to taste)
Salad Base
  • 1 head romaine lettuce, chopped
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained (or 1.5 cups frozen corn, thawed)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup shredded cheddar cheese (or Mexican blend)
Creamy Avocado Dressing
  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt (or sour cream)
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 2-3 tablespoons water, to thin
  • salt and pepper to taste
Garnish
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced jalapeños (optional, for heat)

Method
 

  1. Pat the chicken breasts or thighs dry with paper towels. In a medium bowl, toss the chicken with olive oil and the taco seasoning until evenly coated.

  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes per side, or until cooked through and no pink remains in the center. The internal temperature should reach 165°F (74°C). Alternatively, you can grill the chicken or bake it at 400°F (200°C) for 20-25 minutes.
  3. Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Then, shred it using two forks or dice it into bite-sized pieces.
  4. In a large salad bowl, combine the chopped romaine lettuce, rinsed black beans, drained corn, halved cherry tomatoes, thinly sliced red onion, and shredded cheddar cheese.

  5. While the chicken rests or cools slightly, prepare the creamy avocado dressing. In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and salt and pepper to taste. Blend until smooth and creamy. Add water, one tablespoon at a time, until the dressing reaches your desired consistency.

  6. Add the shredded or diced chicken to the salad bowl with the vegetables and cheese.

  7. Drizzle the creamy avocado dressing generously over the salad. Toss gently to combine all the ingredients. Garnish with chopped fresh cilantro and sliced jalapeños, if using, for an extra kick. Serve immediately.

Notes

To store leftover salad, keep dressing separate from salad ingredients. Store salad ingredients up to 3-4 days and dressing up to 2-3 days in the refrigerator. Not ideal for freezing.
