Lemon Herb Garlic Chicken and Vegetables

Ingredients
  

  • 2 lbs chicken thighs boneless, skinless
  • 1 lb baby potatoes halved or quartered if large
  • 1 lb broccoli florets
  • 1 large red onion cut into wedges
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 1 juice lemon juice
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth optional, for a saucier finish
  • fresh parsley chopped (for garnish)

Method
 

  1. Lightly grease the inside of your slow cooker with cooking spray or a little olive oil to prevent sticking.
  2. In the bottom of the crock pot, add the prepared baby potatoes and red onion wedges.

  3. Arrange the boneless, skinless chicken thighs evenly over the vegetables.

  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Italian seasoning, salt, and black pepper. If you prefer a saucier dish, whisk in the chicken broth at this stage.

  5. Pour the olive oil and herb mixture evenly over the chicken and vegetables. Ensure everything is well coated.

  6. Cover the crock pot with its lid and cook on HIGH for 3-4 hours or on LOW for 6-8 hours, until the chicken is cooked through and the potatoes are tender.
  7. During the last 30 minutes of cooking, stir in the broccoli florets. This ensures the broccoli is tender but not mushy.

  8. Once the broccoli is tender, carefully remove the chicken and vegetables from the crock pot. Serve immediately, garnished with fresh chopped parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm in a skillet over medium-low heat with a tablespoon or two of water or extra chicken broth, or microwave individual portions on 50% power until heated through, stirring halfway. For longer storage, freeze individual portions in freezer-safe containers for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
