Lemon Ginger Iced Tea

Ingredients
  

For the Tea Concentrate
  • 6 cups Water
  • 1/4 cup Fresh Ginger Peeled and thinly sliced
  • 4 Black Tea Bags Or 4 tsp loose leaf tea
For Serving
  • 1/2 cup Fresh Lemon Juice About 3 medium lemons
  • 1/4 cup Granulated Sugar or Honey Adjust to taste
  • 2 cups Cold Water (Optional, for dilution)
  • Ice Cubes Ice Cubes For serving
  • Lemon Slices Lemon Slices For garnish

Method
 

Instructions
  1. In a medium saucepan, combine the 6 cups of water and the sliced fresh ginger. Bring the mixture to a boil over high heat.
  2. Once boiling, reduce the heat to low, cover, and let it simmer gently for 10 minutes to allow the ginger flavor to infuse deeply into the water.
  3. Remove the saucepan from the heat. Add the tea bags (or loose leaf tea) to the hot ginger water. Steep for exactly 5 minutes. Do not over-steep to avoid bitterness.
  4. Remove and discard the tea bags and strain the liquid through a fine-mesh sieve into a heat-proof pitcher to remove all ginger pieces. While the tea is still warm, stir in the sugar or honey until completely dissolved.
  5. Stir in the fresh lemon juice. Taste the concentrate and adjust sweetness or tanginess if necessary. If the resulting tea is too strong, stir in the 2 cups of cold water.
  6. Chill the iced tea concentrate completely in the refrigerator for at least 1 hour, or until very cold.
  7. To serve, fill glasses with ice cubes. Pour the chilled lemon ginger iced tea over the ice and garnish each glass with a fresh lemon slice.

Notes

For a sweeter tea, add more honey or sugar to taste during step 4. If you prefer less caffeine, use white tea instead of black tea, but reduce the steeping time to 3 minutes.
