- Add the chicken breasts or thighs to the marinade, ensuring each piece is well-coated. Cover the bowl and let it marinate at room temperature for at least 15 minutes, or refrigerate for up to 2 hours for a more intense flavor. - Heat a large skillet over medium-high heat. Once hot, add the marinated chicken (discard excess marinade). Cook for 6-8 minutes per side for chicken breasts, or until cooked through and the internal temperature reaches 165°F (74°C). - Remove the chicken from the skillet and let it rest for 5 minutes on a cutting board.
- Once rested, slice the cooked chicken into bite-sized pieces or strips.

Notes
Store components separately in airtight containers in the refrigerator for up to 3-4 days. Reheat quinoa/rice and chicken in the microwave or enjoy cold. For freezing, cool components completely, portion into freezer-safe bags or containers, and freeze for up to 2-3 months. Thaw overnight in the refrigerator before reheating. Add fresh vegetables just before serving.
