  • granola a sprinkle of
  • chopped nuts
  • whipped cream a dollop of

Equipment

  • Medium-sized jar, bowl, or airtight container

Method

  1. In a medium-sized jar, bowl, or airtight container, combine the rolled oats, milk of choice, Greek yogurt, and chia seeds.
1/2 cup rolled oats, 1 cup milk of choice, 1/4 cup plain Greek yogurt, 1 tablespoon chia seeds
  2. Stir these ingredients together thoroughly, ensuring there are no clumps and that the chia seeds are evenly distributed. This will help create a wonderfully smooth and thick consistency overnight.
  3. Add the maple syrup or honey to the mixture. Stir again to incorporate the sweetener evenly throughout the oat base.
1-2 tablespoons maple syrup or honey
  4. Gently fold in the lemon zest and fresh lemon juice. Be mindful not to overmix at this stage; you want to distribute these vibrant flavors without breaking down the oats too much.
1/2 teaspoon lemon zest, 1 tablespoon fresh lemon juice
  5. Finally, stir in the fresh or frozen blueberries. If using frozen berries, they will thaw and release their juices overnight, creating beautiful purple swirls.
    1/4 cup blueberries
  6. Cover the container tightly with a lid or plastic wrap.
  7. Place the mixture in the refrigerator for at least 4 hours, or preferably overnight, to allow the oats and chia seeds to absorb the liquid and thicken.
  8. When ready to serve, give the overnight oats a good stir. If the mixture is too thick for your liking, you can add a splash more milk to reach your desired consistency.
    1 cup milk of choice
  9. Transfer the Lemon Blueberry Overnight Oats to a serving bowl.
  10. Top with your favorite garnishes, such as extra blueberries, a thin slice of lemon, a crumble of granola for crunch, or a sprinkle of chopped nuts. Enjoy your delicious and healthy breakfast!
