- In a medium mixing bowl, combine the cottage cheese and honey or maple syrup (if using). Use a fork or a spatula to mash the cottage cheese slightly, aiming for a smoother consistency. - Gently fold in the fresh lemon zest, fresh blueberries, and lemon extract (if using). Be careful not to overmix, especially if using fresh blueberries, to avoid crushing them completely. - Use a tablespoon or a small cookie scoop to portion out the mixture. Roll each portion between your hands to form small, bite-sized balls. Alternatively, you can line a small baking sheet with parchment paper and drop spoonfuls of the mixture onto it, flattening them slightly into disc shapes.
- Place the formed bites on a plate or the parchment-lined baking sheet and transfer them to the refrigerator for at least 30 minutes. This chilling period is crucial for the bites to firm up and hold their shape, making them easier to enjoy.
