- In a medium-sized bowl or directly in a jar with a lid, add the rolled oats. Pour in the milk and stir gently to combine, ensuring all the oats are submerged.1/2 cup rolled oats (not instant), 1 cup milk (dairy or non-dairy like almond, soy, or coconut milk)
- Spoon in the plain Greek yogurt and stir until it's smoothly incorporated into the oat and milk mixture. Next, add the key lime juice, whisking it in to distribute the zesty flavor evenly.1/4 cup plain Greek yogurt, 2 tablespoons key lime juice (freshly squeezed is best, but bottled works)
- Sprinkle in the chia seeds. These powerhouses will absorb liquid and create a wonderfully thick, pudding-like consistency overnight.1 tablespoon chia seeds
- Drizzle in the honey or maple syrup. Start with 1 tablespoon and add more to taste after it has chilled if desired. - Stir all the ingredients together until everything is well combined. Make sure there are no pockets of dry oats or clumps of yogurt.
- Pour the mixture into a jar or airtight container. Cover it securely with a lid or plastic wrap. Place it in the refrigerator for at least 4 hours, but preferably overnight, to allow the oats to soften and absorb the liquid, and the flavors to meld.
- In the morning, give the overnight oats a good stir. If the mixture is too thick for your liking, add a splash more milk until it reaches your desired consistency. Spoon the Key Lime Pie Overnight Oats into a bowl or enjoy them straight from the jar. Notes
These Key Lime Pie Overnight Oats can be stored in an airtight container in the refrigerator for up to 3-4 days. If they become too thick, stir in a tablespoon or two of milk before serving. Freezing is not recommended.
