Ingredients
  

  • 1/2 cup rolled oats (not instant)
  • 1 cup milk (dairy or non-dairy like almond, soy, or coconut milk)
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons key lime juice (freshly squeezed is best, but bottled works)
  • 1 tablespoon chia seeds
  • 1-2 tablespoons honey or maple syrup (adjust to your sweetness preference)
  • 1/4 teaspoon vanilla extract
  • pinch salt
For Topping (Optional but highly recommended):
  • 2 tablespoons crushed graham crackers Optional
  • 1 tablespoon shredded unsweetened coconut Optional
  • thin slices of lime or lime zest Optional

Method
 

  1. In a medium-sized bowl or directly in a jar with a lid, add the rolled oats. Pour in the milk and stir gently to combine, ensuring all the oats are submerged.

  2. Spoon in the plain Greek yogurt and stir until it's smoothly incorporated into the oat and milk mixture. Next, add the key lime juice, whisking it in to distribute the zesty flavor evenly.

  3. Sprinkle in the chia seeds. These powerhouses will absorb liquid and create a wonderfully thick, pudding-like consistency overnight.

  7. In the morning, give the overnight oats a good stir. If the mixture is too thick for your liking, add a splash more milk until it reaches your desired consistency. Notes
