Ingredients
  

  • 1 cup shredded mozzarella cheese (whole milk, low-moisture)
  • 1/2 cup cream cheese, softened
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon dried oregano
  • Pinch black pepper
  • 10-15 slices your favorite pepperoni
  • Optional: A sprinkle dried basil or red pepper flakes for extra flavor

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup.
  2. In a medium-sized mixing bowl, combine the shredded mozzarella cheese, softened cream cheese, and grated Parmesan cheese. Add the garlic powder, dried oregano, and black pepper.

  3. Using a spatula or a wooden spoon, thoroughly mix all the cheese and seasoning ingredients until a cohesive, smooth dough-like consistency is formed. Ensure there are no pockets of unmixed cream cheese. If the mixture seems a bit stiff, you can briefly microwave it for 10-15 seconds and stir again.
  4. Transfer the cheesy mixture onto the prepared parchment paper. Use your hands or the back of a spoon to spread the cheese mixture into a rectangle, approximately 8x6 inches and about 1/4 inch thick. Aim for an even thickness so that the roll-ups bake uniformly.
  5. Evenly distribute the pepperoni slices over the surface of the cheese rectangle, covering it almost entirely. You can slightly overlap the slices if needed to ensure a good amount of pepperoni in each bite. If you're adding any optional herbs or red pepper flakes, sprinkle them over the pepperoni now.

  6. Starting from one of the longer sides of the cheese rectangle, carefully and tightly roll the cheese and pepperoni into a log. Use the parchment paper to help you guide the roll. Gently press and shape the roll to ensure it's compact and holds its form.
  7. Once the log is formed, use a sharp knife to slice it into individual roll-ups, about 1/2 to 3/4 inch thick. Place the sliced roll-ups cut-side up on the prepared baking sheet, leaving a little space between each one.
  8. Place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the cheese is bubbly, golden brown around the edges, and the pepperoni is slightly crisped. Keep a close eye on them in the last few minutes to prevent burning.
  9. Once baked, remove the Keto Pepperoni Cheese Roll Ups from the oven. Let them cool on the baking sheet for a few minutes before serving. They are best enjoyed warm.

Notes

To store, allow to cool completely and place in an airtight container lined with parchment paper. Refrigerate for up to 3 days or freeze for up to 1 month.
To reheat chilled roll-ups, warm gently in a skillet over low heat or bake at 350°F (175°C) for 5-7 minutes. Reheat frozen roll-ups directly from frozen at 350°F (175°C) for 10-15 minutes.
