  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 4 ounces cream cheese, softened
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 ounces shredded mozzarella cheese
Pizza Toppings
  • 1/2 cup marinara sauce ensure it’s low in sugar
  • 1 ounce pepperoni slices halved or quartered
  • Optional toppings: extra mozzarella, Italian seasoning, red pepper flakes

Method
 

  1. Begin by preheating your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or line it with mini muffin liners. This step is crucial for preventing sticking and ensuring easy removal of your finished pizza bites.
  2. In a medium bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, dried oregano, and salt. This dry mixture forms the foundation of your pizza bites. Set aside.

  4. Gradually add the dry ingredient mixture to the cream cheese and egg mixture. Stir until a dough forms. It will be slightly sticky, and that’s perfectly normal for a keto dough.
  5. Gently fold in the grated Parmesan cheese and shredded mozzarella cheese into the dough until just combined. These cheeses will add a wonderful savory flavor and help give the bites a delightful cheesy pull.

  7. Spoon about 1 teaspoon of low-sugar marinara sauce into the well of each dough cup. Be careful not to overfill, as the sauce can spread during baking.
