Filling

  • 2 large eggs, at room temperature
  • 0.25 cup heavy cream, at room temperature
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (from about 1 medium lemon)
  • 0.5 teaspoon pure vanilla extract
  • 0.5 cup fresh blueberries

Method

  2. In a medium bowl, combine the almond flour, powdered erythritol, and cinnamon (if using). Pour in the melted butter and stir with a fork until the mixture resembles coarse crumbs and is well combined.

  3. Pour the almond flour mixture into the prepared springform pan. Use the bottom of a glass or your fingers to firmly press the crumbs evenly across the bottom of the pan, creating a compact crust. Bake the crust for 8-10 minutes, or until lightly golden brown. Remove from the oven and let it cool slightly while you prepare the filling.
  4. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth and creamy, ensuring there are no lumps. This is a crucial step for a silky-smooth cheesecake.

  5. Gradually add the powdered erythritol to the cream cheese, beating until well combined and smooth. Scrape down the sides of the bowl as needed. Add the eggs one at a time, beating well after each addition until just incorporated. Be careful not to overmix once the eggs are added, as this can lead to cracks in your cheesecake.

  6. In a small bowl, whisk together the heavy cream, fresh lemon juice, lemon zest, and vanilla extract. With the mixer on low speed, gradually add this liquid mixture to the cream cheese batter until just combined.

  7. Gently fold in the fresh blueberries using a spatula, distributing them evenly throughout the filling. Try not to crush them too much.

  8. Pour the cheesecake filling evenly over the cooled almond flour crust in the springform pan. Tap the pan gently on the counter a few times to release any air bubbles.
