Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a medium-sized microwave-safe bowl, combine the shredded mozzarella cheese and the softened cream cheese.

  3. Microwave the cheese mixture in 30-second intervals, stirring well after each interval, until the cheeses are smooth and thoroughly melted. This should take approximately 1 to 2 minutes in total, depending on your microwave's power. Alternatively, you can melt this mixture gently in a saucepan over low heat, stirring constantly.

  4. Once the cheese is smooth and creamy, stir in the grated Parmesan cheese, Italian seasoning, garlic powder, and red pepper flakes (if using). Mix until all the seasonings are evenly distributed throughout the cheese mixture.

  5. Drop rounded tablespoons of the cheese mixture onto the prepared baking sheet. Aim to create small, relatively flat mounds. You can leave them as rounds or gently flatten them with the back of your spoon or a spatula. Ensure there is some space between each portion, as they will spread slightly during baking.
  6. If you're using any toppings like pepperoni or olives, place them on top of each cheese mound now. Remember, too many toppings can add moisture and prevent the chips from getting as crispy, so keep them light.

  7. Bake for 12-15 minutes, or until the edges are golden brown and the centers are bubbly and starting to crisp up. Keep a close eye on them, as cheese can go from perfectly golden to burnt very quickly. The baking time will vary slightly depending on the size and thickness of your chips.
