  • 1 pound boneless, skinless chicken breast or thighs cut into bite-sized pieces
  • 2 tablespoons olive oil or avocado oil
  • 4 cloves garlic minced
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon onion powder
  • to taste salt and freshly ground black pepper
  • 4 large low-carb tortillas or lettuce wraps such as romaine or butter lettuce
  • 1 cup shredded cheddar cheese or Monterey Jack cheese
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice

Method
 

  1. In a medium bowl, toss the bite-sized chicken pieces with olive oil or avocado oil, minced garlic, Italian seasoning, onion powder, salt, and pepper. Ensure each piece is evenly coated.

  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet (no need to clean it), reduce the heat to medium-low. Stir in the mayonnaise or Greek yogurt, Dijon mustard, and lemon juice. Gradually add the shredded cheese, stirring until it melts into a smooth, creamy sauce. If the sauce becomes too thick, you can add a tablespoon of water or unsweetened almond milk to reach your desired consistency.

  5. Lay out your low-carb tortillas or lettuce wraps on a clean surface. Spoon a generous portion of the cheesy garlic chicken mixture onto the center of each tortilla or wrap.
