Ingredients
  

  • 1 package (about 40) square wonton wrappers
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup finely diced fresh jalapenos seeds and membranes removed for less heat, or left in for more kick
  • 2 tablespoons diced cooked bacon optional, but highly recommended
  • 1/4 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh chives or green onions for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with cooking spray or a little butter.
  2. Gently separate the wonton wrappers. If they feel stiff, you can cover them with a damp kitchen towel for a few minutes to make them more pliable.

  3. Carefully press one wonton wrapper into each cup of the prepared mini muffin tin, allowing the edges to fan out slightly. You want them to form a cup-like shape. If you have any overlap, that’s perfectly fine!

  4. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, diced jalapenos, diced cooked bacon (if using), and garlic powder.

  5. Season the mixture generously with salt and freshly ground black pepper. Taste a tiny bit of the filling (before adding raw jalapenos if you're concerned) to adjust seasonings as needed.

  6. Spoon the cream cheese mixture evenly into each wonton cup. Don’t overfill, but ensure each cup has a good amount of the delicious filling.
  7. Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the wonton wrappers are golden brown and crispy, and the filling is bubbly and heated through. Keep an eye on them to prevent burning.

  8. Once baked, carefully remove the muffin tin from the oven. Let the Jalapeno Popper Wonton Cups cool in the tin for a few minutes before gently removing them with a small spatula or knife. Garnish with chopped fresh chives or green onions for a burst of fresh flavor and color.

Notes

For optimal freshness, store any leftover Jalapeno Popper Wonton Cups in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 5-7 minutes.
