Ingredients
  

  • 1/2 cup Rolled oats (not instant)
  • 1 cup Milk (dairy or non-dairy) almond, soy, or oat milk
  • 2 tablespoons Plain yogurt optional, for extra creaminess
  • 1 tablespoon Chia seeds
  • 1-2 teaspoons Sweetener honey, maple syrup, jaggery, or sugar, to taste
  • 1/4 teaspoon Cardamom powder
  • Pinch Saffron strands optional, for color and aroma
Optional Toppings
  • Chopped nuts almonds, pistachios, cashews
  • Fresh or dried fruits mango, banana, berries, raisins
  • A sprinkle Cinnamon or nutmeg
  • Edible rose petals

Equipment

  • Jar or container with a lid
  • Bowl or small saucepan (for optional reheating)

Method
 

  1. In a jar, container, or bowl with a lid, add the rolled oats and chia seeds.
    1/2 cup Rolled oats (not instant), 1 tablespoon Chia seeds
  2. Pour in the milk and add the plain yogurt if you're using it for an extra creamy consistency. Stir in your chosen sweetener, cardamom powder, and saffron strands (if using).
    1 cup Milk (dairy or non-dairy), 2 tablespoons Plain yogurt, 1-2 teaspoons Sweetener, 1/4 teaspoon Cardamom powder, Pinch Saffron strands
  3. Whisk or stir all the ingredients together until well combined. Make sure there are no clumps of chia seeds or oats.
  4. Cover the container tightly and refrigerate for at least 4 hours, or preferably overnight.
  5. In the morning, give the oats a quick stir. If they are too thick for your liking, you can add a splash more milk. Now, it's time for the fun part – add your favorite toppings!

Notes

Leftover Indian Overnight Oats are best enjoyed within 3-4 days when kept properly refrigerated in an airtight container. Can be enjoyed cold or gently reheated.
